Easy Jalapeno Bacon Appetizer


This is one of my very favorite appetizers! And when I say EASY -- I mean EASY!

I made these the other day while some friends were over and we were sitting outside.

Ingredients are simple: bacon, jalapenos and cream cheese.
I used pineapple cream cheese this time.

After halving the jalapenos and scooping out the seeds, fill each half with cream cheese.

Wrap each half with a slice of thin bacon.
I used an entire slice on the larger jalapenos and a half slice of bacon on the smaller ones.
Place on foil-lined baking tray.

I almost forgot to get the final photo! I set the plate down and then remembered to get my camera. By the time I returned, the appetizers were going fast!

Here's the recipe:
1 pound of sliced Applewood Smoked bacon
Approximately 8 jalapeno peppers
1 container of cream cheese (or use an 8oz block, softened)


Wash and cut the jalapenos in half and scoop out the insides. (Be careful when working with hot peppers -- some prefer to wear gloves as the seeds can be quite hot!) 


Spread cream cheese inside each half. I use a knife and keep the cream cheese pretty much level with the pepper. Too much cream cheese, and it will cook over the side.


Wrap each half with a slice of bacon. You can use half a bacon slice, too.
(I do not use toothpicks in mine and have never had a problem.) Put on foil-lined baking sheet.


Bake in pre-heated oven at 400 degrees for about 20 minutes. Keep an eye on them so they don't overcook. Put underneath the broiler if needed for an additional 2-4 minutes. I broil mine until the bacon is done.


You can also do these on the grill -- I haven't tried that yet, but plan to do so one of these days.

Kitesurfing on the Lake

A few times this year, we have seen someone "Kitesurfing" on the lake. I have to admit -- this looks like a LOT of fun!

(I'm not sure if it's called Kitesailing or Kitesurfing or Kiteboarding as all of these terms describe about the same thing. But since Kitesurfing is what Wikipedia brought up, I'm going with that.) 

This is the description given: "Kitesurfing or Kiteboarding is an adventure surface water sport that has been described as combining wakeboarding, windsurfing, surfing, paragliding and gymnastics into one extreme sport."

I was so excited when he was close by our house and I was able to stand on my deck and watch him and take photos.

He is able to control the direction he wants to go and turns around quite easily.

He seriously makes this look so easy but this takes a lot of talent!

Occasionally the kite just lifts him right up out of the water.

Hubby and I enjoyed watching him in front of our house.

Dinner by Fireworks Tablescape for the 4th of July

Our sunroom is set and ready for the upcoming 4th of July!

Red, white and blue is the theme for Independence Day of course!

I wanted to use a variety of blue and red dishes but it was kinda overwhelming. So I stuck to some basic pieces.

Red salad dishes were a Crate and Barrel find -- blue Queen's dinner plates were purchased at TJMaxx.

These plates have become one of my very favorite sets! The blue and white goes with everything.

From our 2nd story sunroom, we can see the fireworks display each year.

Side table is set up with some sparklers for the kids -- along with cupcakes and red, white and blue reusable straws.

The red and blue candlesticks were perfect for a centerpiece. In the right setting, they have a 'firecracker' appearance! I put a little bit of mylar garland around the top of each candlestick and then grouped the rest of it at the base of the candlesticks to create the centerpiece.

These gorgeous glass candlesticks were a gift to me from my Aunt. I have been so anxious to use them in a tablescape!

Purchased cupcakes and I put them into patriotic cupcake liners with little paper toppers. A huge grouping of these on the 4th of July really makes a "bang!"

My favorite thing when I was young (and yes, today!) -- I especially love the giant sparklers!

Lighting the candles in the evening. Boats cruise by all night long in the summer. Fireworks start about 10 pm or when it gets dark. We have the perfect seats for the show!

Happy Father's Day!

I hope everybody had a great Father's Day weekend! We sure did -- it was a long and very busy weekend!

We spent Saturday night with our good friends and cooked a pork roast on the Big Green Egg (more about that in a future post). We had appetizers and dinner outside by the fire pit and watched the boats cruise by on the water. Truly a great evening!







I lost my dad 24 years ago, in 1987. He was only 56. He was one of the first people in Texas to receive a heart transplant back in March 1987. I think he was the 5th. He lived another 8 months following his operation and was able to give me away at my wedding in May. Almost losing him and then having a 2nd chance after the miracle of a heart transplant gave me extra time to cherish every single day I had with him. I still miss him so much! I know his heart transplant paved the way for all the future heart transplants and it is a truly a cause close to my own heart.

How To Grow Grass 101

(Uh, no... this is not about that kind of grass!!)

We had the great pleasure this year of planting a lawn for the first time. The guest house/garage was finished last year and we wanted to wait until this year to put the lawn in. We delayed for a handful of reasons but one of the main things was that we wanted the land to 'settle' after one winter and spring. With all the work that was involved with building the garages, a lot of heavy equipment was brought in and it really tore up the property with some deep ruts and oddball piles of dirt here and there.

Heavy trucks full of cement wrecked havoc on the ground. This was summer 2010.

Winter freeze, snow and the spring thaw did a bit of natural leveling -- and we took it from there.

There are a few options for starting a lawn such as sod (expensive!) and seed (frustrating!). We choose the seed route. 

Honestly, I never thought I'd do a blog post about growing grass! But we spent so much time looking online for information, so I thought it might be a nice idea to post our little adventure. Maybe it will help out someone searching for the same info we were.

With all the factors to take into consideration, I've learned two of them are absolutely essential in growing grass: Lots of luck and a lot of prayers!

Starting in late April and early May, the first item was to get rid of weeds on the soon-to-be lawn.

Two weeks later, we then brought in a few truckloads of top soil and leveled and grated the entire property. This was done with a skid-loader. 


Grass seed was then spread over the entire area.

Once the land was leveled and the good soil laid down, the seeding began. We used a combination of three types of grass seed: Rye, Fescue and Kentucky Bluegrass. This is a great combination for northern states that will grow into a nice, dense lawn.

Now that the seed was laid, this is when the praying and the luck start. The forecast for the next week was supposed to be perfect for growing our new lawn. The ground temperature was good and the next 7 days were a combination of rain and sunshine. We had luck on our side! We prayed for Mother Nature to do her part.

However, luck soon left us. We did receive some rain but not enough to saturate the ground well. Then we were hit with very high winds that dried it out quickly. Finally some more rain came, but then we had an unusual cold spell. 

So far, the seeds had not begun to germinate... about 5 days later, the weather turned perfect again. Good rains, sunny warm days and not much wind. The grass started to take off! 

Then along came two days where the temperature rose to 100 degrees! Sheesh -- from one extreme to the next. We prayed the grass wouldn't burn up and die... 

Everything is finished -- now we wait for the grass to grow!

Prayers worked! Our newly sprouted grass held its ground. About 3 weeks into our grass-growing venture, we began to see it take off and it's doing very well now 6 weeks later. Hubby has even mowed it a couple of times with the mower set high. 

Six weeks later after planting grass seed.

I also planted perennials along the side of the garage.

We are still putting grass seed down in the bare areas.
